Terroir : Lagrasse ; Area of hills, plateaus and rocky terraces on the foothills of the Alaric mountain adjoining the Orbieu river, average altitude of 180 meters, dry and warm Mediterranean climate experiencing low rainfall.
Vinification : Harvest at optimal maturity preserving freshness, light crushing and destemming, short maceration at cool temperature to pick up the fruit and fermentation led under controlled temperature, maintained below 30 ° with daily “remontages” in order to obtain silky tannins. Aged in tank for 12 month before bottling.
